Whole wheat flour contains the germ, endosperm, and bran, making it a complete whole-grain flour rich in nutrients and fiber. Atta flour is typically made from the endosperm and bran, commonly used for chapatis and rotis. Maida flour is refined from the endosperm only and then bleached to obtain a very fine, white texture, similar to American refined flour. Sooji or rava is a coarse-ground product made from the endosperm and is widely used in various Indian dishes.
